225g unsalted butter
150g caster sugar
1 half vanilla essence
1/2 tsp salt
300g plain flour (i used the prima flour)
Pre heat oven 175C
Beat butter, sugar, vanilla essence until smooth and creamy NOT fluffy
Add salt and flour, mix to smooth paste
Shape the dough into a log 4cm, wrap in aluminium foil and refrigerate 2 hours
Cut the log into 6mm thivk slices
Place the slices onto non-stick baking sheet
Bake 12-14 min
